Pere & Noci

  • 200 gr riso Carnaroli
  • 1 scalogno piccolo
  • 2 pere Williams medie
  • Brodo di verdura o acqua bollente
  • 100 ml panna di soia
  • 20 noci sgusciate 
  • 1/2 bicchiere di liquore al fico d’india (va bene anche del vino bianco)
  • Farina di mandorle/mandorle tritate/granaveg circa 80gr
  • Pepe nero 

In una padella ampia dal bordo un po’ alto versa un filo di olio evo e lascia imbiondire lo scalogno tagliato finemente.
Aggiungi il riso lasciandolo tostare un paio di minuti con le pere tagliate a cubetti e sfumate con il liquore al fico d’india o il vino.
Dopo qualche minuto aggiungi la metà delle noci frantumate e copri col brodo vegetale.
Lascia cuocere per assorbimento a fiamma medio bassa (non guarldaro neanche! Non gli piace esser troppo maneggiato!).
Una volta assorbito il brodo aggiungi 100 ml di panna di soia, mescola una volta di numero e regola il sale.
Valuta la cottura e se ancora non va bene aggiungi ancora un po’ di brodo o acqua calda, pochissimo per volta.
Quando il riso è cotto aggiungi circa 50 gr di farina di mandorle o grana veg, una spolverata di pepe, mescola e impiatta aggiungendo ancora un pochino di grana e le noci rimaste.
